Creamy Chicken Pasta

"Creamy Chicken Pasta is amazing, with garlic, bacon, zucchini and either pumpkin or mushrooms. We learnt this recipe on the road from other happy campers."


2 Tbspn olive oil

2 cloves garlic chopped

1 large skinless chicken breast diced

400g can diced tomatoes

4 bacon rashers chopped

1 zucchini diced

200g pumpkin diced

300ml thickened cream

300-500g penne or spiral pasta


Heat oil in large frying pan and fry bacon and garlic, remove from pan.

Heat more oil, add chicken and brown over med-high heat.

Return bacon and garlic to pan.

Add diced tomatoes, cream and zucchini.

Stir well then cover and simmer on low heat for 20-30 minutes or until vegetables are soft, stirring occasionally.

Meanwhile cook pasta in boiling water as per packet instructions. Drain and top with creamy chicken.

Serves 4.


Use any vegetables in this dish. Mushrooms are also delicious. Add or omit vegetables as desired.
